AVOCADO TOAST 🥑😍⁣⁣⁣⁣ ⁣⁣⁣⁣ INGREDIENTS:⁣ ⁣ • 1 medium avocado ⁣⁣⁣⁣ • 2 slices of bread (I prefer whole grain or rye)⁣⁣⁣⁣ • 1 small lime ⁣⁣⁣⁣ • Himalayan salt ⁣⁣⁣⁣ • Pepper⁣⁣⁣⁣ • Cayenne pepper⁣⁣⁣⁣ • 1-2 cloves of garlic (depends on preference)⁣⁣⁣⁣ • Feta cheese ⁣⁣⁣⁣ ⁣ - - - - - ⁣ ⁣⁣⁣⁣ INSTRUCTIONS:⁣ ⁣ 1. In a bowl, mash avocado until desired texture is achieved (I prefer smooth.)⁣⁣⁣⁣ 2. Crush garlic and add to avo mix.⁣⁣⁣⁣ 3. Cut lime in half, squeeze 1/2 into mixture. Add a dash of salt, pepper and cayenne. Stir until mixed.⁣⁣⁣⁣ 4. Toast slices of bread.⁣⁣⁣⁣ 5. Scoop mixture onto toast, sprinkle with feta cheese crumble. TURKEY STUFFED BELL PEPPERS 🌶 ⠀⁣ ⠀⁣ INGREDIENTS: ⁣ ⁣ • 4 medium red (or yellow, orange, or green) bell peppers, cut in half, seeds removed⠀⁣ • 2 tsp. Olive oil ⠀⁣ • 1 medium onion, chopped ⠀⁣ • 1 1/2 lbs extra lean minced turkey ⠀⁣ • 1 1/2 tsp. ground chilli pepper • 1 1/2 tsp. ground cumin ⠀⁣ • 1 tsp. sea salt (or Himalayan salt)⠀⁣ • 1/4 tsp. ground black pepper • 1 cup all natural tomato sauce, no salt or sugar added • 2 cups cooked quinoa ⠀⁣ • 1 cup canned black beans, drained, rinsed ⠀⁣ • 1 cup frozen corn kernels ⠀⁣ • 5 tbsp. chopped cilantro (save some for garnish)⠀⁣ • 2 tbsp. fresh lime juice ⠀⁣ • 1 cup shredded Monterrey jack cheese (I also mix in some feta)⠀⁣ ⁣ - - - - -⁣ ⠀⁣ INSTRUCTIONS:⁣ ⁣ 1. Preheat oven to 375 degrees F.⠀⁣ 2. Place bell peppers, skin side down in large baking dish, set aside.⠀⁣ 3. Heat oil in large nonstick skillet over medium heat.⠀⁣ 4. Add onion; cook, stirring frequently for 4-5 minutes or until translucent.⠀⁣ 5. Add garlic; cook, stirring frequently for 1 minute.⠀⁣ 6. Add turkey, chilli powder, cumin, salt and pepper, stirring frequently for 5 minutes or until turkey is no longer pink.⠀⁣ 7. Add tomato sauce, quinoa, beans, corn, cilantro and lime juice. Reduce heat to medium-low, cook; stirring occasionally for 3-5 minutes or until heated through.⠀⁣ 8. Divide turkey mixture evenly between pepper halves; cover lightly with foil.⠀⁣ 9. Bake for 35 minutes or until peppers are tender; remove foil.⠀⁣ 10. Top each pepper evenly with cheese. Bake 3-5 minutes or until cheese is melted.⠀⁣ 11. HEALTHY + HEARTY CHILI 🌶 ⁣ ⠀⁣ INGREDIENTS: ⠀⁣ ⠀⁣ • 2 tsp extra-virgin, organic coconut oil, melted ⠀⁣ • 1 medium onion, chopped ⠀⁣ • 1 medium green bell pepper, chopped ⠀⁣ • 1 medium red bell pepper, chopped⠀⁣ • 2 cloves garlic, finely chopped ⠀⁣ • 1 lb cooked lean ground turkey ⠀⁣ • 2 cans (15 oz each) kidney beans (or pinto beans), drained and rinsed ⠀⁣ • 1 can organic diced tomatoes, no salt added ⠀⁣ • 1 cup red wine ⠀⁣ • 1 tbsp ground chili pepper ⠀⁣ • 1/2 tsp sea salt ⠀⁣ • 2 tsp crushed red pepper (optional)⠀⁣ • 1/4 freshly chopped cilantro ⠀⁣ ⁣ - - - - - ⁣ ⠀⁣ INSTRUCTIONS:⠀⁣ ⠀⁣ 1. Heat oil in large sauce pan over medium-high heat.⠀⁣ 2. Add onion and bell peppers; cook, stirring occasionally for 5-6 minutes or until onion is translucent.⠀⁣ 3. APPLE CINNAMON QUINOA BITES🍎 (Makes approx. 16 bites)⠀⁣⁣⁣ ⠀⁣⁣⁣ INGREDIENTS:⁣⁣⁣ ⁣⁣ • 1 cup cooked quinoa ⠀⁣⁣⁣ • 1 cup quick oats, uncooked ⠀⁣⁣⁣ • 1/2 teaspoon cinnamon ⠀⁣⁣⁣ • 1/2 teaspoon nutmeg⠀⁣⁣⁣ • 4 tablespoons brown sugar ⠀⁣⁣⁣ • 1 tablespoon of maple syrup ⠀⁣⁣⁣ • 1 cup chopped apples ⠀⁣⁣⁣ • 2 eggs, lightly beaten⁣⁣⁣ ⁣⁣⁣ - - - - - ⁣⁣⁣ ⠀⁣⁣⁣ INSTRUCTIONS:⁣⁣⁣ ⁣⁣⁣ 1. Preheat oven to 350 degrees.⠀⁣⁣⁣ 2. In large mixing bowl add quinoa and quick oats. In smaller mixing bowl, combine dry ingredients then add spice mixture to quinoa and oats. Add maple syrup, apples and egg and mix until combined. ⠀⁣⁣⁣ 3. Spray entire mini muffin pan with non-stick cooking spray ⠀⁣⁣⁣ 4. Fill each muffin spot with 1 tablespoon of mixture and bake 15-20 mins.⠀⁣⁣⁣ 5. Remove from oven, let cool + ENJOY!

BUTTERNUT SQUASH SOUP 🧡⁣ ⠀⁣ INGREDIENTS:⁣ • 1 medium butternut squash (peeled, seeded, cubed)⠀⁣ • 1 medium sweet onion, diced⠀⁣ • 1 piece of celery, chopped⠀⁣ • 2 cloves garlic, minced⠀⁣ • 1 medium potato, cubed⠀⁣ • 2 medium carrots (cubed)⠀⁣ • 1 medium red apple, peeled⠀⁣ • 4 cups of vegetable stock ⠀⁣ • 2 tablespoons of vegetable oil ⠀⁣ • 1/4 teaspoon salt (optional)⠀⁣ • 2 tablespoons of extra virgin olive oil⠀⁣ ⁣ - - - - - ⁣ ⠀⁣ INSTRUCTIONS:⁣ ⁣ 1. Add oil to large pot on medium heat. Add the onion, celery, carrot, apple, garlic, potato, and squash for 5 minutes, or until lightly browned. Pour in enough of the chicken stock to cover vegetables. Bring to a boil. Reduce heat to low, cover pot, and simmer 40 minutes, or until all vegetables are tender.⠀⁣ ⠀⁣ 2. Transfer the soup to a blender and blend until smooth. Return to pot, and mix in any remaining stock to attain desired consistency. Season with salt and pepper to taste.⠀⁣ ⠀⁣ ** Add pumpkin seeds (if desired) upon serving! **⠀

CHOCOLATE CHIA PUDDING 🍫⁣⁣ ⁣ INGREDIENTS:⁣ ⁣ • 2 1/2 cups unsweetened almond milk⠀⁣⁣ • 1/2 cup of chia seeds ⠀⁣⁣ • 6 tablespoons of organic unsweetened cocoa powder ⠀⁣⁣ • 2 tablespoons of maple syrup ⠀⁣⁣ • 2 tablespoons of vanilla extract ⠀⁣⁣ • 1/4 teaspoon of sea salt ⠀⁣⁣ • 3 cups chopped berries (optional)⁣⁣ - - - - - ⁣ INSTRUCTIONS:⁣ ⁣ 1. Combine all ingredients and whisk vigorously for two minutes until cocoa is well incorporated and pudding is well blended.⁣⁣ 2. Let stand at room temperature for 30 minutes; mix well.
