Yummy keto mini cheesecakes! INGREDIENTS For the Cheesecake * 8 oz cream cheese * 1/2 cup sweetener * 1 large egg * 1/2 tsp vanilla extract * 1/4 tsp salt For the Crust * 1/2 cup almond flour * 1 tbsp sweetener * 1/4 tsp cinnamon * pinch salt * 2 tbsp butter, melted INSTRUCTIONS 1. Preheat oven to 300 degrees F. Grease a 6 cup muffin tin, or prepare with paper cupcake liners. 2. Make the crust: Combine almond flour, sweetener, cinnamon and salt in a mixing bowl. Stir well to break up any lumps in the almond flour. 3. Add the melted butter to the dry ingredients, and stir to combine. Using your fingertips, press down flat into the bottom of the muffin tin. 4. Bake for 10-15 minutes, until just beginning to brown. Remove, and let cool at least 10 minutes while you make the batter. 5. Make the cheesecake batter: In a large mixing bowl, beat the softened cream cheese until smooth. Add the sweetener, egg, vanilla extract, and salt. Stir together until well combined. 6. Pour the cheesecake batter on top of the crusts. Bake for 18-20 minutes. Check the cheesecakes for doneness, removing when the center of the cheesecakes still jiggles a bit when you tap the side of the pan. 7. Remove from the oven. Let cool on the counter for 30 minutes, then cover and chill in the refrigerator.

🌮 Jicama Sweet Potato Tacos ⏲ Under 30 mins | Serves 2 Who’s tried jicama before!?🙋🏽‍♀️ This vegetable is so versatile & I just recently got into it. Found these jicama tortillas at the store & had to try it 🤤 Vegan, low cal, & nutritious! 👌🏼 If you’re looking for a HEALTHY Cinco de Mayo meal...well look no further 👀 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️8 Jicama Tortillas (@heb) ▫️1/2 Sweet Potato, cubed ▫️3 clove Garlic, minced ▫️4 Pasture Raised Eggs (@vitalfarms) ▫️2 Avocados, mashed ▫️2 Baby Sweet Peppers, diced ▫️Spices - Chili Powder, Smoked Paprika, Cumin, Salt & Pepper ▫️Fresh Lime Juice ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To❓ ▫️Start off by poking holes in your SP & heating it in the microwave for 1-2 mins. This helps soften it up & cuts the cooking time. Then cut into cubes. ▫️Heat up some EVOO in a pan & add in your SP & minced garlic. Sauté for 2-3 mins. Add in your spices. Cover with a lid & cook for another 5-6 mins, sautéing it every few mins. Set aside. ▫️Cook your eggs, scrambled, seasoned with some salt & pepper. Set aside. ▫️Mash your avocados & add in your diced sweet peppers along with some fresh lime juice & salt. ▫️For your tortillas, layer two together & cook in a pan until brown on both sides. 👉🏼 Load everything up in your tortillas & top with some Everything Bagel Seasoning (@wholefoods) & fresh cilantro! {Recipe video tutorial in story highlights}

🥖 Whole Wheat Sourdough Bread ⏲ 15 min Prep Time | 1 round Loaf My first attempt at making bread &...it was a success! 👏🏼 So easy to make with just 6 simple ingredients & I’ll definitely be making it more often! 😋 Also, no bread maker needed 💁🏽‍♀️ Just a pot & an oven 😉 #ToastTuesday -ing this morning with a slice of this bread🥂 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Deets👇🏼 ▫️2 cups Room-Temperature Water ▫️3/4 tbsp Active Dry Yeast (@bobsredmill) ▫️3 1/4 cup Whole Wheat Flour (@bobsredmill) ▫️3 tbsp Ground Flax Seeds (@bobsredmill) ▫️3 tbsp Ground Chia Seeds ▫️3/4 tbsp Salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ How To❓ ▫️Measure out your room temperature water in a cup. I heated mine up for 15 seconds. Add in your yeast & mix until dissolved. Let it sit for 5-10 mins. ▫️Meanwhile, in a big mixing bowl, sift together your flour, salt, flax & ground seeds. Toss any chunks left behind. ▫️Once your yeast water is ready, add to your flour. Use a spoon to gently mix all the ingredients together. You should have a somewhat sticky dough. Doesn’t have to be perfect but just make sure no patches of flour are left. ▫️Now cover the bowl with a towel & let it sit for roughly 16-18 hours (overnight is 👌🏼). The dough will start to swell. ▫️The next day, preheat the oven to 450°. ▫️Remove the towel & dump out your dough onto parchment paper dusted with flour. Do not knead the dough! ▫️Without applying too much force, round the dough & dust more flour to the top & sides. ▫️Use a pot (or Dutch oven if available) big enough for your dough. You want the pot to be large enough for your loaf. Since you will be adding this pot to the oven, ensure there are no plastic or wooden handles. ▫️Lift up your loaf with the parchment paper & place into your pot. Add the lid & bake in the oven for 30 mins. Then bake uncovered for another 10. ▫️Slice & enjoy your bread 🍞 {Recipe video tutorial in story highlights}
